This Pét-Nat is floral and fruity, but refreshingly bone-dry. The opening aromatics are like sticking your nose in a fermentation vat, with yeasty brioche notes and lively youthful freshness. To follow are notes of night blooming jasmine, citrus blossom, melon rind, warm Kaffir lime scones with preserved lemon with a refreshing hint of sea air.
This rare sparkling Malvasia Bianca was handled gently, and transferred from tank to bottle by gravity. Indeed, the gentle process is a must for "Pét-Nat," as the wine is still fermenting. Thus, the wine makes its own natural bubbles, without additional dosage. Handle with care, too, after opening, as the bottles contain a slight amount of lees sediment, to complete fermentation and add complexity. After that--celebrate with abandon, naturally!
